BBQ Chicken Wings with Blue Cheese Butter

Ingredients

1 sticks unsalted butter, room temperature
6 ounces Roquefort or other blue cheese, crumbled, room temperature
1/2 cup your favorite BBQ sauce
1/2 cup canned piquillo peppers in brine, drained well
2 teaspoons ground cumin
2 teaspoons smoked paprika
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 1/2 pounds chicken wings, separated at the joint, tips reserved for another use
Canola oil, for frying

Method

  1. In a medium bowl, whisk together the butter and 4 ounces of the blue cheese until very smooth. Transfer to a serving bowl and set aside at room temperature.
  2. In a blender, puree the BBQ sauce, peppers, 1 teaspoon of the cumin and 1 teaspoon of the paprika until smooth. Pour into a large mixing bowl large enough to hold all of the wings.
  3. In a shallow dish, whisk together the flour, remaining cumin and paprika, and season it with salt and pepper. Sprinkle the wings with salt and pepper. Fill a deep, heavy pot with 6 inches of oil and heat to 365 degrees F, or preheat a deep fryer.
  4. Toss the chicken wings in the seasoned flour until well coated, shaking off the excess flour. Fry in batches until golden brown, crisp and cooked through about 13 minutes. Drain briefly on paper towels before adding them to the sauce and tossing them to coat while they are still hot.
  5. Transfer the wings to a serving platter. Dollop a little of the blue cheese butter on top of the wings to melt; serve the rest on the side for dipping. Sprinkle the remaining blue cheese over the top and serve immediately.

Banana Bread with Pecans

Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners’ sugar, for dusting

Method

  1. Pre-heat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
  2. In a large bowl, combine the flour, baking soda, and salt; set aside.
  3. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.
  4. Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf, comes out clean. Don’t get nervous if the banana bread develops a crack down the center of the loaf; that’s no mistake, it’s typical. Rotate the pan periodically to ensure even browning.
  5. Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners’ sugar, and serve.

Hanger Steak Sandwich with Bourbon Creamed Spinach

Ingredients
Old Fashioned Glaze:
2 oranges, peel removed in large strips and reserved
1 cup bourbon
2 tablespoons maraschino cherry juice
Freshly ground black pepper
2 tablespoons unsalted butter

Steak:

2 pounds hanger steak
Kosher salt and cracked black pepper
Kosher salt and cracked black pepper
Vegetable oil

Sandwich Build:

Bourbon Creamed Spinach, recipe follows
4 pretzel rolls, buttered and griddle
1 small red onion, sliced and soaked in ice water for 15 minutes

Bourbon Creamed Spinach:

Two 10-ounce boxes frozen spinach, thawed
3 tablespoons unsalted butter
2 cloves garlic, minced
1 small yellow onion, finely chopped, about 1 cup
Kosher salt and pepper
1/4 cup bourbon
1 1/2 cups heavy cream
2 cups grated smoked gouda cheese

Method

Sandwich Build:

  1. For the glaze: Add the orange peel, bourbon, cherry juice and some black pepper to a small saucepan. Simmer until reduced to 1/4 cup, about 10 minutes. Your pot may flame from the bourbon, don’t worry just wait until the alcohol burns off. Once reduced, turn off the heat and whisk in the butter.
  2. Sprinkle the steak liberally with salt and pepper. Heat a cast-iron pan over medium-high heat. Add a light coat of oil and place the steak in the pan. Cook the steak almost to the desired doneness, depending on thickness, 3 to 5 minutes per side. Turn off the heat and glaze the steak on all sides in the pan while flipping. Remove the steak from the pan to rest.
  3. For the sandwich build: Pile some Bourbon Creamed Spinach on the bottom piece of the pretzel roll. Thinly slice the steak against the grain and place on top of the spinach. Top with some red onions and finish with the top of the roll. Repeat for the remaining sandwiches.

Bourbon Creamed Spinach:

  1. Strain the thawed spinach in a colander and squeeze liquid out with a towel. Melt the butter in a large straight-sided skillet over medium heat.
  2. Add the garlic and onions, season with salt and pepper and cook until onions are softened about 5 minutes. Turn off the heat and add the bourbon. Stir to combine, turn the heat back on to medium and simmer 1 minute.
  3. Add the cream, and cook until the cream is reduced by half, about 5 minutes. Stir in the cheese and cook until melted, and then mix in the spinach to combine. Cover and cook over low heat until the spinach is tender, 8 to 10 minutes, and then season with salt and pepper.

Banana Pudding

Ingredients

1 box instant vanilla pudding
2 cups very cold milk

Whipped Cream Topping:

1 cup very cold heavy cream
3 tablespoons confectioners’ sugar
2 cups (about 1/3 box) vanilla wafers
2 bananas, sliced
1 teaspoon pumpkin pie spice, for garnish

Method

  1. Put pudding packet contents into a glass bowl. Whisk in the milk. (To get milk very cold, put it in the freezer for 15 minutes).
  2. In a clean bowl, using an electric beater or a whisk beat together the cream with confectioners’ sugar until soft peaks form.
  3. Line each serving glass with a single layer of vanilla wafers and top with about 3 tablespoons of pudding mix, whipped cream, then a few slices of banana. Repeat creating 3 layers and finishing with a pudding layer. Allow to sit in a refrigerator for at least 1 hour and up to overnight to set and soften the cookies.
  4. Top each dessert with a generous dollop of whipped cream. Garnish with pumpkin pie spice, a vanilla wafer and slice of banana.

S’mores Ice Cream Pie

Ingredients

1 1/2 cups finely crushed graham cracker crumbs
1/4 cup white sugar
6 tablespoons butter, melted
1 (28 ounces) package chocolate ice cream, slightly softened
2 cups miniature marshmallows, or enough to cover the top

Method

  1. Place graham cracker crumbs into a bowl, add sugar and melted butter, and mix until well combined. Transfer mixture into a 9-inch pie dish. Gently press graham cracker mixture into the bottom and up the sides of the pie dish using a spatula. Pat the edge and inside of the crust smooth with your fingers.
  2. Refrigerate crust until thoroughly chilled, at least 30 minutes.
  3. Fill crust with chocolate ice cream using a small ice cream scoop. Smooth the ice cream with a spatula. Place a ring of mini marshmallows around the inside of the crust and cover top of ice cream with remaining marshmallows. Gently press marshmallows into the ice cream.
  4. Freeze until very firm, at least 2 hours.
  5. Use a propane blow-torch to toast the marshmallows, moving the torch quickly to brown the marshmallows. Marshmallows should have small charred spots. Return to freezer to chill the marshmallow topping, at least 3 hours; slice and serve.
